The estate

The groves sit between 450 and 600 m, on limestone that drains fast and holds the day’s heat. Picual dominates, with older Hojiblanca and a small Arbequina block planted in 2015. Harvest starts in the first week of October, well before most of the region, which costs yield but buys the green, high-polyphenol style the estate is known for.

The mill is a two-phase Pieralisi line kept below 24 °C. Oil is stored under nitrogen and bottled to order, so the harvest date on the label tells you something.
