Artajo

A family business at Tudela since 1780, whose olive-growing was revived and modernised in 1998. The Los Llanos estate covers nearly three hundred hectares in the Ebro valley between the Bardenas Reales and the Moncayo, and grows fourteen cultivars chosen from over seventy trialled.

The estate

Koroneiki, Arbequina, Arbosana, Manzanilla Cacereña and Arróniz are the named cultivars, all farmed organically. The valley gets over 3,300 hours of sun a year, with Mediterranean, continental and Atlantic influences meeting in the same place.

The mill sits on the plantation, so olives reach it within two hours of picking. Extraction runs at 18–20 °C with a double-cut mill, a refrigerated malaxer and refrigerated centrifuges, with in-line filtering; the oil is stored under nitrogen at 18–20 °C and bottled on demand into dark, inert bottles.
