The olive varieties behind the oils in the library, counted from the oils themselves.

A cultivar is the variety of olive the oil is pressed from, and it does more to shape how an oil tastes than any other single factor. A Picual and an Arbequina grown in the same grove, picked on the same day and milled in the same machine will not taste alike.

Every variety below is counted from the oils we hold: the number is how many oils in the library carry it, not an estimate of how much is planted. Varieties with a reference page of their own are linked; the rest open the library filtered to that variety.
