Jabalcuz
A cooperative formed in 2004 from the merger of two sister societies at Los Villares, south-west of Jaén, working mountain Picual on the flanks of the Sierra de Jabalcuz. In 2025 its Gran Selección took first prize in the medium green fruity class at the IOC’s Mario Solinas award.

The estate
Around 1,400 member families, and 17 million kilos of olives processed in the 2025/26 season. Storage runs to more than 5.2 million kilos across 54 stainless-steel tanks.
The cooperative sells its output explicitly as mountain oil — family-sized holdings on steep ground in the Sierra Sur, picked in October and, it states, milled the same day. Its predecessor label, La Pandera Premium, scored 94 points in the EVOOLEUM guide.
