Miceli & Sensat

An organic estate in the Palermo hinterland founded in 2017 by Paolo Miceli and Sergio Sensat, joining a Sicilian farming family to a Spanish olive-growing line that goes back to the mid-1800s. It was named the world’s best organic mill in the World’s Best Olive Oils 2025/26.

The estate

One hundred and fifteen hectares of certified organic groves and 48,000 trees between 200 and 450 metres near Lago Garcia, west of Palermo. The estate grows native Cerasuola and Biancolilla alongside two Spanish cultivars, Picual and Arbequina — and the Spanish vines are not planted directly but grafted onto wild Sicilian olive rootstock.

Olives are hand-picked early and milled within hours at the estate’s own mill, with temperature monitored through extraction and storage. Irrigation is subsurface drip from on-site reservoirs. Output is over 45,000 litres a year, roughly 85% of it exported.
