Olibaeza

A Baeza cooperative founded in 1951 and rehoused in purpose-built premises in 2008. Its 1,263 members work over 554,000 olive trees and produce around 10.5 million kilos of oil a year; the premium line is picked in early October under Integrated Production.

The estate

The members grow Picual, with some Arbequina, on La Loma around Baeza. About 35 million kilos of olives pass through the mill in an average season, and nearly two thousand local families are connected to the cooperative.

For the Olibaeza premium line, fruit is selected from members’ groves and picked in early October while still green, before it turns purple, then cold-extracted. The bottles carry two designs referencing Baeza cathedral and the town’s ceramics, one of them with a Machado quotation.
