The bee on the label is a farming statement: Eco Day comes from organic groves managed to keep their daytime pollinators in them. Inside is a serious early-harvest Picual at 690 mg/kg — within a whisker of the Flor de Abeja line — but tuned for daily use rather than for the number. Green and herbaceous, with a clean bitterness and a pepper that lands lightly. The estate's everyday flagship, and the one we hand people who ask for "a good olive oil".

Green fruity, led by tomato plant, artichoke and freshly cut grass, with apple peel and green banana behind — the second pair is what keeps it from reading as purely vegetal. Medium-bodied, with bitterness and pungency arriving together and neither dominating; the finish is peppery and clean rather than long. Notably smooth for its phenolic count, which is the whole trick of this bottle: 690 mg/kg usually costs you approachability, and here it does not.
