Oleícola Jaén
A Baeza mill that started in the early 1980s pressing olives for local growers and now runs an "almazara 4.0" opened in 2022. The World’s Best Olive Oils 2025/26 ranked it the fifth-best mill in the world, with three of its oils in the top twenty.

The estate
The company owns no groves. It buys olives from growers around Baeza, Úbeda, Linares and Mancha Real, which makes its results a statement about milling rather than about farming. Picual, Arbequina, Frantoio, Royal, Hojiblanca and Coratina all pass through it.
It began burning olive stones as fuel in 1986, switched from three-phase to two-phase extraction in 1994, took organic certification in 2013 and started bottling monovarietals in 2015. The new mill, reported at around six million euros, opened in 2022. Premium lots are picked green in October and November and milled straight away.
