Schinosa
Masseria Schinosa dates to 1647; Maria Francesca Di Martino has run the groves personally since 1996, and the estate’s own mill opened in 2015. Around 180 hectares of mostly centuries-old trees on the limestone behind Trani.

The estate
About 28,000 trees, most of them 150 to 200 years old, across the Santa Perpetua, Dote and San Giovanni districts. Coratina dominates, with roughly nine hectares of Peranzana and six of Nocellara, plus Leccino, Picholine and Bella di Cerignola for the table.
Each variety is picked at its own moment — table olives first, Peranzana next, Coratina last. Milling is on an Amenduni continuous two-phase line with automated temperature control during crushing. An organic line, Stellare Bio, is bottled from Leccino.
