Freyya Premium Nefes
Hanım Parmağı
The flagship of Buta Assos and one of very few oils made from Hanım Parmağı, an olive identified in the Ezine district of Çanakkale in 2014 and registered as a variety in 2017 — about five hundred trees stand mixed through the Kulfal grove. Picked entirely green, ultra-early, and pressed the same day on the estate’s Mori-Tem line. The producer describes refreshing, fruity, grassy aromas and an exceptionally smooth palate, and “remarkably high” polyphenols without publishing a figure. Sold filtered and unfiltered.

Where it's from
Ayvacık is the district behind the ancient city of Assos on the Çanakkale coast, facing Lesbos. Hanım Parmağı — “lady’s finger” — is a local olive the producer calls ancient Anatolian and the registry calls a 2017 variety; both can be true.
