Fyllikon First Harvest Organic
Sakellaropoulos’s first-harvest oil, picked very unripe from mid-September to early October and extracted at 16–18 °C within hours, unfiltered — the greenest expression of the estate’s Koroneiki. Intense aromas of freshly picked green olives and fresh herbs, with a prolonged, complex, fresh aftertaste, in the producer’s words. It has been used in Harvard and Yale diet research, and the producer’s medal count for the whole range runs past 1,300, chiefly at London, Olympia and the EVOO World Ranking. The producer says its oils exceed 2,000 mg/kg polyphenols but publishes no dated per-oil certificate; a retailer prints 1,825 mg/kg by NMR for an unspecified lot. Neither is given a meter here.
