Pamako Monovarietal Tsounati
A mountain Tsounati from old trees above Sougia and Paliochora, picked in several passes as the fruit ripens and pressed at the owner’s own facility. What distinguishes it is the certificate: each harvest is analysed by NMR at the National and Kapodistrian University of Athens and the producer publishes the document. For 2024 that is 1,222 mg/kg total phenols, with oleocanthal 372, oleacein 262 and oleuropein aglycone 233 mg/kg — among the highest producer-certified figures in this library. Fresh and fruity with strong spicy elements and a soft bitterness, by the producer; artichoke to ripe tomato, in an Olive Oil Times tasting. Registered as a food supplement in Belgium.

Where it's from
Selino is the south-western district of Chania, mountainous and sparsely planted; the Tsounati trees here are described by the producer as monumental, with some 10,000 Koroneiki lower down near Maleme.
