Oro Bailén
A family estate on the Guadalquivir plain in Jaén, run by the Gálvez family under the company Galgón 99. The farm was bought in 1999, the mill built in 2005, and the whole operation is set up around one idea: pick early, mill within hours, bottle to order.

The estate
Two farms, Los Juncales and La Casa del Agua, around Villanueva de la Reina in the heart of Jaén — the province that alone produces more olive oil than all of Italy. Most of that oil is late-harvest, bulk Picual. Oro Bailén went the other way: in the early 2000s José Gálvez, third generation, moved the family from selling fruit to the cooperative to making premium single-varietal oils, and the estate has since collected most of the industry's top awards, including 99/100 in the Flos Olei guide and EVOOLEUM's world number one.
Harvest starts in early October, well before the region, and fruit is cold-extracted within hours of picking. The range is four monovarietals — Picual, Arbequina, Hojiblanca and Frantoio — plus an organic Picual; all five are in the library and all five are stocked in our shop.
