Hermus Emerald
A selection, not a cultivar: the very first day of the Arbequina harvest, when the fruit is at its greenest and, the producer states, around twenty kilos of olives go into each kilo of oil. Sold only in 100 ml. More bitter than the rest of the range, with the same green apple, rocket and green tea notes. The producer’s US site states 1,117 mg/kg polyphenols; the figure does not appear on the Turkish site.
