Le Ferre

A producer on the ravine country of Castellaneta, in the province of Taranto, with groves at 230–290 m. Its Selezione is one of the few oils in the library whose polyphenol figure comes with the laboratory’s name, method and report attached; the rest of the range — an IGP Coratina, an organic blend, an everyday four-variety blend — follows the same habit of publishing numbers. Founded year and estate size are not published.

The estate

Groves between 230 and 290 m on neutral-pH soils, planted to Coratina, Ogliarola, Frantoio and Leccino. Olives are machine-harvested and processed within 24 hours; extraction is cold, below 27 °C, on a continuous two-phase line; oil is held in stainless steel under nitrogen.

The producer positions blending as its craft, and publishes a technical sheet and laboratory report for each oil. Selezione’s figures are from Chemiservice in Monopoli, an ISO/IEC 17025 laboratory, by the IOC HPLC method.
